The Salty Carve is focused on bringing people together to share the delicacy that is Jamon Iberico. In the community or at your next fabulous event, we're excited to share our knowledge and bring a slice of Spain to the Crystal Coast.
The Salty Carve was created in a shop in Steamboat Springs, Colorado, where Elizabeth began carving Jamon for Butcher, Laura Posiak. During her Carving Apprenticeship, Elizabeth learned how to prepare the leg for presentation and carve delicate, thin slices of ham. It became clear she had found the niche she had been searching for in her decade of restaurant experience. Elizabeth created the Salty Carve as a way to carry on her passion wherever she goes.

Jamon Iberico

Ham of the Iberian Black pig. Widely known for the way fat stores in the muscle, each leg has a unique marbled effect.
Jamon Iberico de Bellota
Often referred to as Pate Negra, this is one of the best hams in the world. Not only are the pigs 100% pure-bred Iberian Black Pigs, but they also require acorns in their diet. This ham is carefully salt cured for 30 days and hung to age for 48 months.
Jamon Iberico
These pigs are not fed acorns. They are completly grain fed. This ham can come as 100% Iberico, but it can also present as 50% Iberico 50% Duroc. This ham is salt cured for 30 days and hung to age for 36 months.
Serrano
50% Iberico 50% Duroc, this ham is salt cured for 30 days and aged for 24 months.

Jamon
A truly unique addition to any event. This service would involve Elizabeth arriving at the event space, setting up, two hours of carving, and cleaning up. Total events last approximately four hours. If you would like to purchase the entire leg, we are happy to take a stand deposit that will be returned with the return of the stand.

  • The Salty Carve is in the process of relocating to New Bern, NC. The site will be updated frequently as we settle into our new town.
